Tasty Tofu Scramble Breakfast Burrito

Welcome my little cumin seeds to a incredibly delicious tofu recipe you'll be sure to use time and time again. Scrambled tofu is undoubtably a delicious way to prepare tofu. Poor tofu seems to get a bad wrap, lol (wrap as in we wrap this tofu in a burrito).. but do your research I see no reason why organic, non gmo tofu cannot be enjoyed in moderation.


I used to be someone who ate eggs every morning. I grew up like many of you eating eggs and bacon, a real American staple. It wasn't until a first hand experience seeing where and who my eggs and bacon came from that gave me pause to stop eating eggs and bacon. I embrace now egg alternatives and feel there is no loss at all in flavor or in my health. Plus a benefit is no little piggies or eggies were harmed in the making.

Note: This recipe can have so many variations, add a tempeh bacon or soy chorizo in the burrito for some variety. You can always switch it up with corn tortillas for breakfast tacos instead, or use this recipe to make a super quick whip up for a scrambled tofu, perfect with toast and salsa. Overall a great one to start on if you normally enjoy eggs in the morning or are just a burrito fan like myself. Have fun with this one.





Ingredients

2.5 cups of cubed cooked russet potato

¾ cup chopped fresh tomato

1 cup chopped onion

1 firm block of tofu

1 cup chopped green onion

½ cup chopped red bell pepper

2 tablespoons coconut oil

1-tablespoon vegan butter

1 tsp salt

1 tsp. paprika

½ tsp black pepper

½ tsp garlic powder

1 tsp tamari or soy sauce

1-tablespoon nutritional yeast

¾ tsp turmeric powder


Method

In a large non stick pot or cast iron skillet heat 2 tablespoons of coconut oil on medium heat add potatoes, chopped bell pepper, and onion. Cook on medium high heat for 5-10 min until potatoes start to get crispy and onions are translucent.

Crumble in the tofu and add all seasonings and the 1-tablespoon of vegan butter, mix well to combine and cook additional 2-3 mins.  When ingredients are well combine add the fresh chopped tomato and green onion, mix and then turn off heat.

Prepare a large tortilla and begin to add filling, can add any condiments or cheese at this point. Roll up burrito and enjoy.
