Ekadashi Friendly Chipotle Herb Quinoa Tofu Patties

Hello beauties, so for those of my friends who practice ekadashi, which is a yogic holiday where you fast from grains like rice, breads etc. Those of you in the yoga community know what I’m talking about 🧐🤓I see you. Heyy was thinking of you guys.


I thought to post my recipe for Chipotle Tofu Quinoa patties. Quinoa is a seed, so technically considered by some to be grain free.


For everyone else you can stick these patties in between a burger bun and enjoy a nice plant based burger.


These burger patties are super flavorful hope you adventure to try this recipe.









Prep time 30  mins

Makes 7-10 patties

Ingredients

3 cups cooked quinoa

1 block firm organic tofu

⅓ cup nutritional yeast

¼ cup finely chopped green onion, parsley, or cilantro

2 teaspoons garlic powder

½ teaspoon cumin powder

Juice of ½ a lemon

2 tablespoons tahini

1 tablespoon Braggs, liquid aminos, or tamari

½ tablespoon chipotle Tabasco hot sauce or any hot sauce of choice

Salt and pepper to taste

Method

1. Place cooked quinoa in a large bowl. Crumble tofu with your hands and add it to the quinoa. Stir.


2. Add all other ingredients. Mix thoroughly until the mix is consistent enough to form patties.

Test the patty mix, then add salt and pepper to taste.


3. Form 1-inch thick patties and place them on a parchment paper lined baking sheet. Bake for 25 minutes at 385˚ F. Flip patties 15 minutes into baking to brown on both sides.




Highly recommend enjoying these with ketchup OR vegan mayo.. SO GOOD.
