Amazing Minestrone Soup (V+GF) Recipe by Chef Ras Ram

2 tablespoons coconut oil
4oz GF organic brown rice pasta
1 can organic kidney beans
1 can organic whole peeled tomato (Muir Glen's our fav)
1 half bunch of fresh kale
1 small hand bunch of fresh parsley
1 full hand bunch of fresh basil
2 whole green zucchini
1 large carrot
1/3 of a elephant garlic clove
1/4 of a medium onion 1/4 of a whole red bell pepper
2 tsp herbs de provencia a dash of clove , turmeric, coriander, salt pepper to taste.
Home made vegetable stock. BLESS UP! & INJOY!
1 1/2 tbsp apple cider vinegar.
In a large pot sauté on medium low heat add red bell pepper, onions, garlic, and carrots until onions are translucent roughly 10-15 mins.
Season with spices and deglaze with apple cider vinegar.
After additional 5 mins proceed to add potatoes and beans. Stir and add 1 can of crushed tomatoes. Mix everything in the pot throughly to combine.
Proceed to add both just enough so everything in the pot is covered.
Cook for 25-30 mins until everything is cooked.
Lastly add zucchini, kale, fresh tomatoes and pre-cooked gluten free noodles. Finish with fresh herbs at the end.
